  • Alba cinnamon, also specified as the uppermost grade of Ceylon cinnamon, is a spice prepared from the well-selected, thin, and matured inner bark of the Ceylon cinnamon tree  (Cinnamomum verum syn Cinnamomum zeylanicum), native to Sri Lanka. Alba is dominated by its delicate, sweet flavor, aroma, and great appearance of sticks. 

    The process of handcrafting Alba cinnamon sticks involves a meticulous process by experienced peelers. The carefully selected trees are harvested for cinnamon bark. The outer bark is removed, revealing the thin inner bark delicately peeled by hand. The peeled bark is then dried under indirect sunlight, curled into cinnamon sticks, and slowly converted to a well-dried spice. The result is a fragrant and flavorful spice that is highly sought after in culinary and medicinal applications.
